CHARLESTON, SOUTH CAROLINA Never afraid of a challenge, Matthew Schaefer has climbed the ranks from line cook to Head Catering Chef for MOSAIC, Charleston. Originally from Winchester VA, Matthew first found a passion for food from his Grandparents, when he would often help to harvest their garden and prepare Irish staples like Shepherd’s Pie and Coddle. Raised to be well-rounded, Matthew was involved in the arts and sports throughout his upbringing, until his admiration for science drove him to study Biochemistry and Biology at Old Dominion University. While in school, Matthew rediscovered his passion for food while working in various kitchens in Norfolk, VA. The Lowcountry cuisine drew him to Charleston upon graduating in 2014, and Matthew hasn’t looked back since. Combining his artistic upbringing with his scientific studies, Matthew executes his craft on all levels with one simple goal- to leave every client speechless with his cuisine. In his free time, Matthew enjoys playing basketball and writing screenplays while soaking up the sun on Sullivan’s Island.
